The quality of the beans, are they from a good crop, region and have they been processed correctly. Even the best quality beans won’t taste good if they are not fresh. Fresh beans are measured by how long ago they were roasted and how long since they were ground. Clean good tasting water is a must; over 98 percent of your coffee is water. The equipment you use to prepare your coffee must be clean, the water temperature must be right for the beans and the coffee must be steeped for the correct amount of time. Buying the best quality beans but not having the other elements in place will result in a poor cup of coffee. Cheaper beans that are fresh and brewed properly will taste better. There are two elements to look at when brewing a cup of coffee strength and yield. Strength is the amount of coffee that is extracted from the cof- fee in comparison to the volume of water. Yield is the quality of the sol- uble extracted from the coffee. You can get a strong cup by putting a lot of coarsely ground coffee into a small amount of water and leave it to steep for less than a minute but you won’t get the flavour from the beans. At the other extreme you could put a small amount of coffee into a large pot of water and leave too steep for 20 minutes. You will have a weak but bitter brew. This guide will give you suggestions that will allow you to make the perfect cup of coffee for you. The best way to accom- plish this is to follow our guidelines and then experiment a little, change your quantity of coffee, vary the steep time and something I am sure you will do any way, try different beans.
Espresso
Espresso is made by forcing hot water through a tightly packed, finely ground pod of coffee. The high pressure quickly and effectively releases the flavour. If you ever wondered why Espresso is so much more expen- sive, now you know. To use high pressure you need special machinery which is expensive and the process is very precise so you need to do it right, hence the expertise of the operator and of course it tastes great so it’s also worth the extra cost. The crema, which is the golden brown liq- uid that forms on the top of the coffee, is the key indicator of the quality of the coffee, too light, thick or too thin; all mean that the espresso is sub standard.
Cappucino
Derived from the espresso and complemented with a rich head of frothed and foamed milk. Although the coffee is hidden underneath this mini snow cloud mountain its core ingredient, coffee must be of the highest quality to get the best taste. How do we make Cappuccino? Semi skimmed milk and steam. The steam is used to aerate the milk to give a nice whipped cream effect. Some tips to help you make your perfect cup of Cappuccino. Use warm cups to avoid cream deflating. The steam spout must be under the surface of the milk before turning on. Move the jug around. Carefully pour frothed and steamed milk over the coffee.

…Schoonmaken
